Tuna Stuffed Chili Peppers
This dish is great because it is so creamy. Creamy dishes tend to be high in fat and calories but by using the right kind of cheese and mayonnaise, you can make this dish healthy and low in calories. This recipe serves sixteen people.
What you will need:
  • 3 oz low fat Neufchatel cheese
  • 2 oz can chopped green chilies
  • 2 tablespoons fat free mayonnaise
  • 4 poblano peppers
  • 1/2 teaspoon ground cumin
  • 2 tablespoons minced green onions
  • 2 tablespoons minced cilantro
  • 6 oz can tuna in water
How to make them:
Core and de-seed the poblano chilies but leave them whole. Mix the mayonnaise and Neufchatel, beating the mixture with an electric whisk until smooth. Add the green chilies, tuna, cilantro, cumin, and green onion and stir well. Spoon this mixture into the poblano peppers. Cover and chill them for a few hours, then cut each stuffed poblano into one-inch pieces and serve garnished with sprigs of cilantro.
Crunchy Oven Fried Vegetables
This is a brilliant recipe for vegetarians and you can serve the oven-fried vegetables with a low calorie ranch dip. This recipe makes enough to serve sixteen people. The mushrooms tend to cook faster than the other vegetables. As soon as the vegetables are golden brown and tender, they are done.
What you will need:
  • 4 tablespoons grated parmesan
  • 1 cup fine Italian seasoned breadcrumbs
  • 8 cups thick zucchini slices, cauliflower florets, button mushrooms or sliced onions
  • 8 tablespoons low calorie Italian salad dressing
  • 1/2 teaspoon paprika
How to make them:
Spray cooking oil spray over a nonstick cookie sheet. Stir the parmesan, paprika, and breadcrumbs together. Drizzle the vegetables with the salad dressing and toss them well. Roll them in the breadcrumb mixture, and then arrange them on the cookie sheet. Bake for about ten minutes at 450 degrees F, turning once during the cooking time.

Add all the ingredients to a pan and cook over a moderate heat until smooth. Serve the sauce warm with bread, crackers, or vegetable crudites for dipping.
